Endive – Salad King

Botanical Name: Cichorium endivia

Salad King is a large, frilly curled endive (frisée type) with finely cut, deep green outer leaves and a paler, tender heart. Endive is a type of chicory (Cichorium endivia, chicory family). The leaves have a mild bitterness that adds crunch and character to salads, and they hold up well when wilted or lightly cooked.

  • Type: Cool-season annual
  • When to sow: Early spring or late summer. In warm regions (zones 8–10), sow August–September for fall and winter harvests.
  • Seed depth: 1/4 inch
  • Spacing: 10–12 inches apart
  • Germination: 3–7 days
  • Light: Full sun to partial shade
  • Days to harvest: About 85–100 days

Tip: For a milder, paler heart, blanch plants by tying the outer leaves together (or covering the center) for 1–2 weeks before harvest. Cool weather gives the best flavor.

Curled endive 'Salad King' FAQ

When should I plant endive?

Cold regions (zones 3–6): sow in early spring or midsummer for a fall crop. Warm regions (zones 8–10): sow late summer to early fall for fall and winter harvest, or late winter for spring. Heat causes bitterness and bolting.

How long until harvest?

Most endives are ready in about 60–90 days from sowing, depending on variety and season.

Can I grow it in a container?

Yes. Use a pot at least 8 inches deep and keep the soil evenly moist.

How can I make the leaves less bitter?

Grow in cool weather and blanch the center by tying outer leaves together for 1–2 weeks before harvest.
